When Hotel Palisade was built as a pub for port workers in 1915, it was the highest building in Sydney. It might have since ceded that position to skyscrapers in the nearby CBD, but this refurbished spot still boasts an unbeatable vantage point. Sip cocktails in the rooftop Henry Deane bar, with its panoramic views of the harbour; soak in a more old-school vibe in the Public House downstairs; or spend the night in one of its boutique guestrooms.
