1. The Lindis, New Zealand

The unblemished Ahuriri Valley of New Zealand’s South Island — a four-hour drive from Christchurch — is home to a luxury property like no other. Appearing less like a hotel than an alien spacecraft emerging from the corrugated landscape, The Lindis holds just five suites – and an otherworldly dining experience. Chef Cesare Stella melds Italian sensibilities with modern techniques, leaning heavily on ingredients from his backyard. Highlights include foraged mushrooms bathed in brandy and garlic as well as dukkah-crusted local lamb served with capsicum purée.

2. Baba Beach Club, Phuket

Over in Thailand, just north of Phuket, Baba Beach Club plates up pan-Asian specialities just steps away from the sand. Otoro (fatty tuna belly) and melt-in-your-mouth wagyu beef are shipped in daily from Japan, and you’ll be amazed at how well that maki pairs with your mai tai.

3. The Times Square EDITION, New York

New York’s Times Square might be considered the crossroads of the universe, but it had been largely barren when it came to quality cuisine. That all changed last March, with the opening of The Times Square EDITION. At the hotel’s swanky 701West, chef John Fraser – known for his Michelin-starred vegetarian and vegan restaurant NIX – deftly affixes a modern American approach atop classic French flavours. Dishes such as mushroom en papillote and butter-roasted poussin sing with sensuality.

4. Gorgeous George, Cape Town

Finally, in South Africa, downtown Cape Town is slowly developing into an international dining destination, with the brand-new Gorgeous George leading the charge. From a sleek and verdant rooftop, the restaurant and bar Gigi showcases braised beef and slow-roasted duck alongside playful cocktail presentations.
