The Lobby Lounge is the luxury hotel’s all-day dining space that serves up elegant afternoon tea or evening cocktails with equal aplomb. It’s a grand setting for chef de cuisine Charles Nguyen’s elevated interpretation of local street food favourites like seafood fried Hokkien mee, which he masterfully infuses with wok’s breath.
The cocktails, designed with Cat Bite Club’s award-winning mixologist Jesse Vida, pay homage to the historic neighbourhood. Haji Paji, for instance, takes its name from the nearby Haji Lane. It’s a potent blend of Tequila Ocho Plata, Herrencia Mezcal, cumin, grapefruit, lime and absinthe.
