Mosella
New Mediterranean dining destination at Pan Pacific Orchard
Mosella, Pan Pacific Orchard’s latest all-day dining destination, takes over the space formerly occupied by 10 at Claymore. While the restaurant’s lush, airy interiors remain largely unchanged, its menu has been refreshed with a focus on Mediterranean cuisine.
The food comes in hearty portions made for sharing, so solo diners, take note. Familiar favourites include paella, available with seafood or chorizo – we prefer the latter for its richer, more flavourful chicken stock base – and Gambas al Ajillo, featuring plump king prawns in chilli and garlic oil. But pace yourself: there’s plenty more to come.
The Josper-grilled specials, available at dinner only, are a must. Go straight for the Cochinillo Asado: all 1.2kg of succulent pork is prepared over two days – cured for 12 hours, sous vide for another eight, then roasted for about six hours to achieve crisp, crackly skin that’s oh-so-addictive.
For a larger group, the Fuente de Carne – a generous spread of whole spatchcock chicken, suckling pig, lamb chops and Bass Strait beef bone-in prime rib – is made for sharing.
If there’s still room for dessert, the Spanish Rice Pudding is a safe bet, topped with brown butter gelato and a crisp puffed rice cracker for added crunch.
