Housed in Mandarin Gallery on Orchard Road, Modu is the first samgyetang (Korean ginseng chicken soup) specialty restaurant in Singapore. Designed to resemble a traditional Korean house, the serene white-and-wood-toned space serves six variations of the nourishing soup, each slow-boiled for 12 hours. The signature Hanbang Samgyetang is the most classic, featuring fork-tender chicken, glutinous rice and a light yet flavourful broth made with traditional herbs and jujube. For diners who prefer a gentler ginseng flavour, the Nokdu Samgyetang is a more comforting, slightly sweeter soup that uses mung beans and leek. Dining with a friend? The 2-gather set includes one samgyetang each, and an appetiser and a small plate to share. Complete the meal with a warming cup of roasted sunchoke tea, which has a subtle nutty flavour.
