This Chamartín bistro has been a favourite among locals – and, notably, chefs – since 1972. Charismatic chef-owner Sacha Hormaechea serves a lean menu of daily specials and Spanish dishes with Catalan and Galician influences – from sardines in garlic sauce to steak tartare – and the speciality: falsa lasaña de txangurro.
In it, traditional pasta sheets are replaced with ultra-thin rice paper and layered with a spider crab (txangurro) filling.
