A communal dining experience set within John Hardy’s Seminyak Boutique, The Long Table by John Hardy offers a contemporary interpretation of Indonesian cuisine inspired by nostalgia, heritage, and seasonality.
At its centre is a long teak table set beneath the boutique space, overlooking a quiet garden and adjacent temple. The setting is unhurried and atmospheric, designed for shared dining that unfolds gradually from afternoon into evening.
Led by executive chef Tomy Saputra, the menu draws on Indonesian culinary tradition and regional produce, reworked into a sharing-style format that evolves with the day.
What to expect
Meals begin with a series of small bites before unfolding into krupuk served with sambals from across the archipelago. From there, larger sharing plates arrive, including coal-grilled fish finished with local spices and kecombrang (ginger flower), alongside iga bakar – beef short ribs braised in tamarind and sweet soy before being charred over fire.
Even the seasonal vegetable dishes carry an understated depth. Banana blossoms sauteed with smoked fish sambal brings a savoury, smoky lift, while jukut kelor mesanten, a Balinese preparation of moringa leaves simmered in a rich coconut broth, offers a hearty yet gentle aromatic warmth. Together, they reflect a focus on regional ingredients that are often overlooked.
The meal typically concludes with desserts such as kembang tahu, a soft set soy-based sweet, followed by a tableside es campur (shaved ice dessert) station that reinterprets the classic Indonesian mixed-ice street dessert.
For those seeking the full experience, the communal set menu is priced at IDR680,000++ (approximately S$45) per person, with an optional wine and beverage pairing available for an additional IDR550,000++ (approximately S$40) per person.
