Recognised by the Michelin Guide 2026, Fu Cheng, under the direction of Michelin-starred chef Justin Yang, channels the culinary soul of Quanzhou, a historic coastal port where centuries of maritime trade have shaped a cuisine defined by layered flavours and a reverence for exceptional ingredients.
The extensive menu is a love letter to the region’s coastal bounty and mountainous terroir. Centrepieces such as Braised Abalone with Sea Cucumber and Fish Maw in Superior Broth (Buddha Jumps Over the Wall) and Steamed Sanmen Crab with Glutinous Rice are made for celebratory occasions, while Jinjiang-Style Braised Beef Steak and Fuzhou-Style Home-Stewed White Pomfret offer rich, comforting flavours.
Elsewhere, the Quanzhou-Style Authentic Oyster Omelette, Duck with Aged Ginger and Licheng Mee Sua showcase the distinctive flavours of Fujian. Refined but never fussy, the cooking remains firmly rooted in the region’s culinary heritage while feeling entirely of the moment.
