Three of Hong Kong’s most renowned mixologists have joined forces to launch this funky little bar that pays tribute to Ernest Hemingway – a man as serious about his cocktails as the owners. Smack in the heart of Soho, it’s a perfect hideaway spot for aperitifs or digestifs, all at prices that are refreshingly modest. Signatures, all named after Hemingway’s works, include Snows of Kilimanjaro (marshmallow gin, lacto-fermented raspberry, citrus, gruyere cheese) and The Sun Also Rises (applejack, curry-infused gin, vermouth, pandan leaves, lime kafir).
