Ramie by siblings Trinh and Thai Nguyen is the most ambitious Vietnamese restaurant in Seattle, interpreting traditional flavours and ingredients with a contemporary twist in the lively Capitol Hill neighbourhood. Juicy pork trotters sliced and served with butter lettuce wraps, pickled purple radish with garlic and fresh herbs are the star of the show, and an absolute must-order.
