This Chamartín bistro has been a favourite among locals – and, notably, chefs – since 1972. Charismatic chef-owner Sacha Hormaechea serves a lean menu of daily specials and Spanish dishes with Catalan and Galician influences, including sardines in garlic sauce and steak tartare. Don’t miss their speciality, falsa lasaña de txangurro, which replaces traditional pasta sheets with ultra-thin rice paper before it is layered with a spider crab (txangurro) filling.
