Korea isn’t a particularly vegetarian-friendly place, but non-meat eaters can seek refuge at Sanchon. Founded by the monk Jungsan, the restaurant serves up Buddhist temple cuisine. There are no animal products here; instead, recipes take advantage of the natural bounty of herbs and vegetables that grow on Korea’s many mountains.
