A former IT professional, Flavio swapped tech for a chef’s hat more than a decade ago and today his Velavevodetto (which means “I told you so”) is at the epicentre of the very gastronomically inclined Testaccio neighbourhood. Focusing on classic cucina Romana staples, what Flavio might lack in experimentation is made up for with fabulous, locally sourced ingredients and an attention to detail.
