Between the mid-19th and mid-20th centuries, waves of migration from China’s Fujian and Guangdong provinces brought Chinese traditions into contact with Malay and European colonial influences, helping shape the distinctive Peranakan culture found across Malacca, Penang and Singapore.
Drawing inspiration from his ancestors’ journey from Xiamen, 2022 World Class China Champion Allen Fang brings this meeting of cultures to his bar. Chinese woodcarvings, Malay-style shutters, Portuguese tiles and symbolic flora inform both the interiors and staff uniforms. Behind the bar, rice koji forms a recurring thread through a menu that pairs Asian ingredients with Western mixology techniques.
Around 65 per cent of the cocktails are low-ABV, balanced by a selection of stronger classics, resulting in a drinks programme that offers a contemporary interpretation of the cultures and flavours that inspired it.
