Behind the bar, knowledgeable mixologists whip up wildly innovative signature drinks – some 85% of spirits and ingredients are made in-house, using techniques such as fermentation, maceration and distillation, with additions like kombucha and kefir. There’s even a sustainability element – the bar works with local producers and takes great pains to reduce plastic use. Don’t expect tipples with brand-name bases, or any wines.
