
Created by the brains behind wine bar Juice and cocktail bar Foxtail, Nou is an atmospheric, retro-stylish space that goes bold with flavours. Here, co-collaborator chef Petrina Loh (Morsels) explores marination and fermentation techniques to add dimension and depth to the soul food of Asia. Take the exceptional scallop spinach noodles. The distinctive green strands are tossed in a flavour-packed XO umami sauce, then layered with plump kombu-cured Hokkaido scallops and tobiko, making every bite a familiar-yet-new sensation.
The small plates are just as innovative – you’ll find your chopsticks will keep diving back into the enticing mess that is the beef tongue spam.
